The Ideal Candidate Will Be:

• Passionate about artisan baking, fermentation and traditional techniques
• Experienced in bread, pastry, sourdough and bakery production
• Skilled in dough management, proofing and baking time discipline
• Quality-focused with exceptional attention to detail — RECIPE IS KING
• Reliable, self-motivated and able to work the early shift independently
• Eager to maintain and uphold the highest standards of hygiene and cleanliness

Key Responsibilities:

• Ensure sufficient bread and pastries are ready for store opening
• Prepare all bakery products strictly according to recipes and handling methods
• Ensure all prep and premade pastries are labelled, dated and up to date
• Record wastage daily on wastage sheets
• Complete daily, weekly and monthly stock takes and hand to Head Baker
• Perform prep according to the list given by the Head Baker for the following day
• Practice clean-as-you-go discipline at all times

Minimum Requirements:

• 2+ years artisan bakery or pastry experience
• Comfortable working the early morning shift (02:00–12:00)
• Ability to work 6 days per week on a rotating roster
• Own transport advantageous given early start times
