Job description

As an Assistant F&B Manager at Mount Nelson, A Belmond Hotel, you are part of a team that brings guest experiences to life through immersive, unique experiences. Primary Responsibilities Include:

  • Supervise, co-ordinate and direct the prompt, cordial and efficient service of food and beverages to ensure that service standards are maintained.
  • Ensure the highest standards of service excellence and quality in the food and beverage department.
  • Assist in the day-to-day logistics of food and beverage service and to increase productivity and reduce costs.
  • Assist with updating and implementing departmental Standard Operating Procedures.
  • To assist with the implementation of formal training plans and to conduct on-the-job training sessions for all employees on a regular basis.
  • Implement systems and procedures that achieve higher cost efficiency and guest satisfaction.
  • Responsible for relevant reporting deadlines, payroll & rosters.
  • Monitoring and controlling of various operating equipment, standards and inventories.
  • Monitoring and controlling food and beverage costs and variances.
  • Ensure that regular departmental meetings are held and that all company information is frequently shared throughout the department.
  • Must ensure that duties are carried out in accordance with Leading Quality Assessment (LQA) standards.
  • Assist in all F&B outlets as and when required.
  • Responsible for the development and maintenance of all department control procedures.
  • Oversee and complete monthly stock takes within the department.
  • General administrative duties when required.
  • Consistent monitoring of food and beverage quality.
  • Ensure that all the operational standards set for all processes are followed and adhered to.
  • Ensure through regular monitoring of guest feedback, queries and complaints for delivering prompt, efficient and accurate service.
  • Address any grievance and counselling issues among the department.
  • In liaison with the Food & Beverage Manager, to ensure that the food and beverage costs are maintained at their agreed levels and the correct profit margins are achieved.
  • Work with all F&B Outlet Managers and keep them informed of F&B issues as they arise.
  • Conduct regular meetings with the outlet managers and supervisors and constantly monitor guest complaints, compliments and suggestions.

Requirements What You Bring:

  • Must have 3-5 years F&B management experience in a luxury hotel environment.
  • A motivated individual with good communication and interpersonal skills.
  • Budget preparation and administrative control experience.
  • Exceptional leadership abilities with great attention to detail.
  • Strong analytical and project management skills.
  • Innovative/creative (problem solving skills), conceptual and analytical skills.
