Job Title: Back-Grill Cook / Kitchen Prep
The Back-Grill Cook is responsible for high-volume, high-quality preparation and cooking of all hot menu items, with a primary focus on the flat-top grill and deep fryers. This role ensures that every breakfast combo, burger, and specialty item is prepared quickly, consistently, and to exact recipe specifications while maintaining strict kitchen hygiene standards.
Key Responsibilities & Duties
1. Grill Operations & Cooking
Operate the back flat-top grill, fryers, and gas burners efficiently during high-pressure rush periods.
Cook high volumes of breakfast proteins (streaky bacon, premium back bacon, pork breakfast sausages, pork bangers, and beef patties) to exact standards.
Manage grill space effectively to ensure orders are completed simultaneously (e.g., ensuring toast, eggs, chips, and meats for a single combo finish cooking at the same time).
Monitor and maintain correct cooking temperatures to eliminate food waste and ensure food safety.
2. Food Preparation (Prep Work)
Execute daily prep lists before the morning rush (slicing tomatoes, portioning 150g/300g chip bags, preparing burger sauces, and organizing egg stations).
Ensure all stock is rotated correctly using the FIFO (First-In, First-Out) method.
Monitor stock levels on the line and alert management when ingredients (bacon, sausages, eggs) are running low.
3.Kitchen Hygiene, Safety & Maintenance
Maintain a spotlessly clean workstation throughout the shift ("clean as you go").
Scrape, clean, and oil the flat-top grill regularly to prevent flavor transfer and carbon buildup.
Ensure correct handling and storage of raw meats separate from ready-to-eat items.
Assist with deep-cleaning the kitchen, fryers, and extraction hoods at the end of the day or on designated cleaning schedules.
Job Requirements & Qualifications
Experience:Minimum 1–2 years of experience working as a short-order cook, griller, or line cook in a fast-paced takeaway, container kitchen, or restaurant environment.
Technical Skills:Proven ability to manage a busy commercial flat-top grill and commercial deep fryers. Strong knife skills for vegetable and meat prep.
Speed & Stamina: Ability to work quickly and stay calm under pressure during the morning and lunch rushes. Capable of standing for long periods in a hot kitchen environment.
Communication:Clear verbal communication skills to coordinate orders smoothly with front-of-house cashiers.
