Job description
Position Purpose The Food Safety Supervisor ensures the retail outlet strictly complies with South African food safety legislation (Regulation R638) and internal SPAR corporate standards. This role is responsible for eliminating food safety risks across all high-hazard departments, including the Bakery, Service Deli, Butchery, and Cold Chain storage. Key Responsibilities 1. Regulatory & Corporate Compliance • Maintain the validity of the store’s Certificate of Acceptability (CoA). • Act as the primary point of contact for Municipal Health Inspectors and SPAR auditors. • Enforce full compliance with Regulation R638 and HACCP principles. 2. Departmental Supervision & Risk Mitigation • Butchery: Monitor raw meat handling, hook sanitation, and color-coded board usage. • Service Deli: Enforce the 4-hour rule for hot-holding foods and track rotisserie chicken core temperatures. • Bakery: Oversee allergen segregation (nuts, gluten) and deep-cleaning schedules for ovens and proofers. • Receiving & Floor: Inspect incoming supplier trucks, verify delivery temperatures, and reject compromised stock. 3. Documentation & Record Keeping • Conduct and log daily temperature checks for all display fridges (<5°C) and freezers (<-18°C). • Maintain accurate traceability records, supplier delivery logs, and batch codes. • Manage daily staff health-screening registers and medical clearance records. 4. Staff Training & Hygiene Enforcements • Conduct ongoing, practical food hygiene training and tool-box talks for floor staff. • Monitor personal hygiene standards, including handwashing protocols and correct PPE/uniform wear. • Manage the corrective action process when staff violate food safety protocols. [1] Qualifications & Experience • Education: National Senior Certificate (Matric) required; Diploma in Food Technology or Environmental Health is advantageous. • Certification: Valid, accredited R638 / HACCP Person in Charge Certificate (SETA aligned). • Experience: Minimum of 2–3 years of supervisory experience in a fast-paced retail supermarket or commercial kitchen environment. Key Competencies & Skills • Proficient knowledge of South African food safety laws and retail cold chain management. • Strong leadership skills with the ability to firmly enforce protocols on the shop floor. • High attention to detail for meticulous record-keeping and auditing. • Ability to work under pressure during peak retail trading hours and unexpected audits.
