We are not a fine dining restaurant, but we aspire to deliver service that rivals the very best. Professional without pretension, polished without feeling scripted. Every guest should leave having had a memorable experience.

We're looking for a General Manager to help build that culture from day one.

The Role

As General Manager, you will lead every aspect of the restaurant, from opening preparation through to daily operations and long-term growth.

You'll recruit, train and inspire the team, establish operational systems, maintain exceptional service standards and create an atmosphere guests want to return to.

This is a hands-on leadership role. You'll lead service from the floor while continuously improving systems, developing people and driving performance.

We're Looking For Someone Who

• Has strong front-of-house management experience in an outstanding restaurant.
• Has worked in sophisticated, premium or fine dining environments where exceptional service was expected.
• Is ideally in their late 20s or early 30s and excited by the opportunity to build a restaurant from the ground up.
• Is systems-oriented, highly organised and enjoys creating structure.
• Has a genuine instinct for hospitality, ambience and guest experience.
• Leads with professionalism, energy and humility.
• Wants to build a long-term career, not simply manage shifts.

Key ResponsibilitiesLeadership

• Build, train and lead an exceptional front-of-house team.

Guest Experience

• Deliver exceptional service every day.
• Build relationships with regular guests.
• Ensure the atmosphere, service and attention to detail set Briquette apart.
• Handle guest feedback professionally and proactively.

Operations

• Develop and refine operating systems and SOPs.
• Manage staffing, reservations and daily service.
• Work closely with the kitchen to deliver seamless service.
• Maintain outstanding presentation standards throughout the restaurant.

Financial Performance

• Manage labour costs and scheduling.
• Monitor operating performance and profitability.
• Drive efficiencies without compromising the guest experience.

Opening Responsibilities

As our opening General Manager you will help build Briquette from scratch by:

• Recruiting the team.
• Developing systems and training.
• Leading opening rehearsals.
• Establishing the culture and service standards from day one.

Essential Experience

• 4 to 8+ years in premium hospitality.
• Experience as a Restaurant Manager, Assistant GM or General Manager.
• Strong leadership and team development skills.
• Sound understanding of restaurant operations and financial management.
