Harvest Intern (January – April 2027)

Join the winemaking team at Simonsig Wines for the 2027 grape harvest. As pioneers of Cap Classique and champions of Stellenbosch terroir, we offer hands-on exposure to both sparkling and still wine production in a dynamic, quality-driven cellar environment.

Key Responsibilities

• Grape receiving, sorting, processing, and press operations
• Fermentation monitoring (brix, temperature, daily pump-overs, and punch-downs)
• Addition of oenological products, yeast inoculation, and rehydration
• Barrel management (filling, topping, and cleaning)
• Cellar hygiene, equipment sanitation, and tank preparation
• Assisting the winemaking team with routine laboratory analysis and sensory assessments

Requirements

• Currently pursuing or completed a degree/diploma in Viticulture and Oenology (or related field)
• Previous harvest experience is advantageous, though energetic candidates with a passion for wine will be considered
• Strong physical stamina and the ability to work extended hours, weekends, and shifts during peak harvest
• Detail-oriented with a strong commitment to cellar hygiene and safety standards
• Ability to work effectively within a fast-paced, collaborative team environment
• Valid driver’s license and own reliable transport
