Job description
We are seeking a highly organized and dynamic Head Chef / Kitchen Manager to lead our back-of-house operations. You will oversee high-volume food production from prep to off-site execution, balancing culinary creativity with strict cost controls and logistics management.
Key Responsibilities
- Menu & Culinary Development: Design scalable, seasonal menus tailored to diverse client themes, dietary requirements, and budget constraints.
- Operations & Event Logistics: Coordinate food prep timelines, equipment packing, transport safety, and successful on-site event execution.
- Financial & Cost Control: Manage food costs, menu pricing, portion sizing, and supplier negotiations to maximize profitability.
- Inventory Management: Oversee purchasing, stock rotation (FIFO), and waste reduction for high-volume orders.
- Team Leadership: Recruit, train, schedule, and manage a core kitchen team and variable freelance event staff.
- Compliance & Safety: Enforce absolute compliance with health, food safety.
Requirements & Skills
- Experience: 5+ years of commercial kitchen experience, with at least 2 years in high-volume event catering management.
- Leadership: Proven ability to manage, adapt, and problem-solve calmly under high-pressure event timelines.
- Financial Acumen: Strong experience tracking kitchen finances, labor costs, and food waste.
- Technical Skills: Competence in kitchen inventory management software and recipe costing tools.
- Flexibility: Ability to work evenings, weekends, and holiday shifts depending on event schedules.
Pay: R20 000,00 - R25 000,00 per month
