Junior Sous Chef

Career Growth Hospitality Recruitment is looking for an experienced and passionate Junior Sous Chef to join a busy hotel kitchen in Cape Town.

This is an excellent opportunity for a strong Chef de Partie who is ready to take the next step into a junior management role. The successful candidate will support the senior kitchen team with daily operations, supervise junior chefs and ensure consistently high standards of food preparation, presentation, hygiene and service.

Key Responsibilities:

• Support the Sous Chef with the day-to-day management of kitchen operations
• Supervise, guide and train Commis Chefs, Demi Chefs de Partie and other junior team members
• Ensure dishes are prepared on time and meet the required standards for quality, taste and presentation
• Assist with menu development, recipe creation and kitchen planning
• Monitor portion control, food waste and kitchen costs
• Assist with stock management, ordering, checking deliveries and stock rotation
• Maintain high standards of cleanliness, food safety and hygiene
• Ensure compliance with HACCP and all relevant health and safety requirements
• Help create a positive, productive and well-organised kitchen environment
• Work closely with the wider culinary team to ensure smooth and efficient service

Requirements:

• Recognised culinary diploma or equivalent professional qualification
• At least two years’ experience as a Chef de Partie within a hotel environment
• At least one year’s experience supervising or managing a team
• Good knowledge of cooking techniques and commercial kitchen equipment
• Strong leadership, communication and team coordination skills
• Sound knowledge of food safety and hygiene regulations
• Good planning, organisation, time management and problem-solving skills
• Creativity, attention to detail and a commitment to excellence
• Ability to manage challenging situations calmly and professionally
• Resilient and able to work well under pressure in a fast-paced kitchen
• Good command of the English language
• Willingness to work varied shifts, including evenings, weekends and public holidays
