We pride ourselves on delivering exceptional dining experiences at scale. We are currently seeking a highly experienced, resilient, and dynamic Kitchen Manager to take the helm of our bustling 500-seater restaurant. If you thrive in a high-pressure, fast-paced environment and have a proven track record of running large-scale kitchen operations seamlessly, we want you on our team.
### **The Role**
As the Kitchen Manager, you will be the engine room of our restaurant. You will oversee all back-of-house (BOH) operations, ensuring that food quality, presentation, and ticket times remain flawless even at maximum capacity. You will manage a large kitchen brigade, control food costs, and maintain the highest standards of hygiene and safety.
### **Key Responsibilities**
* **High-Volume Operations:** Drive daily kitchen operations for a 500-seat venue, seamlessly managing high turnover and massive service peaks.
* **Team Leadership:** Roster, train, and manage a large brigade of chefs, line cooks, prep staff, and scullery. Foster a positive, disciplined, and high-performance kitchen culture.
* **Quality Control & Expediting:** Act as the primary expeditor during peak services. Ensure every plate that leaves the kitchen meets our strict quality and presentation standards.
* **Stock & Financial Control:** Oversee daily and weekly stock takes, manage ordering, minimize wastage, and strictly maintain target Gross Profit (GP) margins and food costs.
* **Health & Safety:** Enforce rigorous hygiene, food safety, and sanitization protocols, ensuring full compliance with health regulations.
* **Equipment Maintenance:** Manage the upkeep of all kitchen equipment, scheduling preventative maintenance and immediately addressing breakdowns.
### **Requirements**
* **Experience:** Minimum of 5 years of experience as a Kitchen Manager or Head Chef, with at least 2 years specifically managing high-volume venues (300+ seats).
* **Leadership:** Proven ability to command a large kitchen team calmly and effectively under extreme pressure.
* **Financial Acumen:** Strong understanding of restaurant kitchen financials, including inventory management systems, GP calculations, and labor cost control.
* **Systems Knowledge:** Proficiency in modern point-of-sale (POS) and BOH inventory software.
* **Flexibility:** Willingness to work restaurant hours, including evenings, weekends, and public holidays.
