Operations & Stock Manager – Beluga Restaurant
Location: Cape Town Cruise Terminal, V&A Waterfront, Cape Town
Beluga Restaurant is seeking an experienced, detail-oriented Operations & Stock Manager to join our dynamic management team.
This is a hands-on management role requiring an individual with strong operational knowledge, exceptional stock control experience, and a sound understanding of food and beverage costing within a high-volume hospitality environment.
The successful candidate will play a key role in ensuring operational efficiency, maintaining stock integrity, driving compliance, supporting restaurant management, and ensuring the business operates in accordance with company policies and industry best practice.
Key Responsibilities
- Oversee all stock management functions, including ordering, receiving, issuing, transfers and stock control.
- Conduct daily, weekly and monthly stock takes and investigate all stock variances.
- Maintain accurate stock records and ensure stock integrity across all departments.
- Capture supplier invoices and ensure accurate pricing and stock allocation.
- Manage and maintain the Pilot Point of Sale and stock management system.
- Compile and maintain accurate food and beverage costings.
- Calculate menu costing percentages and monitor gross profit margins.
- Analyse cost of sales and identify opportunities to improve profitability.
- Prepare operational reports and stock analysis for management.
- Forecast stock requirements based on business volumes and upcoming events.
- Manage supplier relationships and ensure cost-effective purchasing.
- Assist with menu engineering and pricing strategies.
- Ensure all recipes and portion controls are accurately costed and implemented.
- Monitor waste, breakages and losses, implementing corrective measures where necessary.
- Assist with budgeting, month-end procedures and financial reporting.
- Oversee and maintain compliance with all food safety, health and safety, liquor licensing, hygiene and relevant legislative requirements.
- Conduct regular operational compliance audits and implement corrective actions where required.
- Develop, implement and continuously improve Standard Operating Procedures (SOPs), policies and operational manuals.
- Ensure all operational documentation, registers and compliance records are maintained and up to date.
- Support the General Manager in the day-to-day management of restaurant operations.
- Assist with staff training and ensure adherence to company standards and operating procedures.
- Work closely with all departments to improve operational efficiencies and maintain exceptional service standards.
- Ensure compliance with company policies, food safety standards and internal controls.
Minimum Requirements
- Grade 12 (National Senior Certificate or equivalent).
- Hospitality Management qualification or similar tertiary qualification will be advantageous.
- Minimum 5 years' experience in an Operations, Stock Control or Costing Management role within the hospitality or restaurant industry.
- Advanced working knowledge of Pilot Point of Sale (essential).
- Demonstrated experience in developing operational systems, SOPs and compliance processes.
- Strong understanding of:
- Food costing
- Beverage costing
- Recipe costing
- Gross Profit calculations
- Cost of Sales analysis
- Hospitality stock control systems
- Hospitality compliance and operational standards
- Advanced Microsoft Excel skills.
- Strong numerical and analytical ability.
- Excellent organisational and administrative skills.
- Valid driver's licence and own reliable transport.
