Sous Chef

A luxury private game reserve in KwaZulu-Natal is seeking a talented and driven SOUS CHEF to join their culinary team.

This is a hands-on kitchen role for someone who thrives under pressure, takes real ownership of food quality and stock control, and enjoys the rhythm of remote lodge life. You'll work closely with the Head Chef and fellow chefs across the reserve, so strong communication and a genuine team mentality matter just as much as your knife skills.

Core Criteria:

• Minimum 3 years' relevant experience in the service industry
• Valid, unendorsed South African driver's license essential
• Strong organisational skills and lateral thinking ability
• Comfortable working unsupervised and taking initiative
• Solid computer literacy
• Excellent communication skills with guests, chefs, and other departments
• Honest, driven, and career minded
• Passion for great food and a commitment to World Class Hospitality standards

Core Responsibilities:

• Set and maintain kitchen hygiene standards
• Train chefs and implement kitchen procedures
• Manage stock control, rotation, and ordering for storerooms, fridges, and freezers
• Oversee strict food costing and drive cost cutting initiatives with local suppliers
• Check all food leaving the kitchen for guests
• Manage leftovers daily and keep an emergency food supply on hand for unexpected situations
• Prepare and check snacks and provisions for game drives, bush banquets, and picnics
• Communicate special dietary requirements to the team and personally greet guests with specific needs before their first meal
• Liaise with camp managers and butlers so front-of-house understands each dish and its ingredients
• Support other lodges on the reserve when needed
• Have a weather contingency plan in place for outdoor dining

Live-in position
Transport to and from leave cycles is the candidate's own responsibility

Pay: R14 000,00 - R26 000,00 per month
