We are looking for an experienced and passionate Sushi Chef to join our team.

The ideal candidate will have strong sushi preparation skills, excellent attention to detail, and the ability to work efficiently in a busy kitchen while maintaining high standards of quality, presentation, and hygiene.

Key Responsibilities

• Prepare a variety of sushi, including rolls, nigiri, sashimi, and other Japanese dishes
• Prepare and portion fresh fish, seafood, rice, vegetables, and other ingredients
• Ensure excellent presentation and consistent quality of all dishes
• Maintain high standards of food safety, cleanliness, and hygiene
• Ensure ingredients are stored and handled correctly
• Monitor stock levels and assist with stock control
• Minimise food waste through correct preparation and portioning
• Keep the sushi station clean, organised, and ready for service
• Work efficiently during busy service periods
• Collaborate with the kitchen and front-of-house teams

Requirements

• Previous experience as a Sushi Chef is essential
• Strong knife skills and experience handling and preparing raw fish
• Knowledge of sushi rice preparation, rolling techniques, and presentation
• Good understanding of food hygiene and safe food-handling practices
• Ability to maintain consistency and quality under pressure
• Reliable, punctual, and professional
• Able to work well independently and as part of a team
• Willing to work shifts, weekends, and public holidays when required
