Haute Boutique Patisserie – Johannesburg
We are looking for a skilled and reliable Viennoiserie / Pastry Baker to join our pastry team.
Applicants must have proven hands-on experience producing laminated dough products, including croissants, from scratch. Experience producing cruffins, Danish pastries and other contemporary viennoiserie is highly advantageous.
Key Responsibilities
- Prepare and laminate croissant and viennoiserie dough from scratch
- Produce croissants, cruffins, Danish pastries and related products
- Manage dough temperature, butter incorporation, folding, sheeting and proofing
- Maintain consistent shape, size, bake and quality across production batches
- Work efficiently within a professional pastry production environment
- Follow recipes, production schedules, hygiene procedures and quality standards
- Assist with general pastry and baking production when required
- Maintain a clean, organised workstation
What We're Looking For
- Demonstrable experience with laminated dough and viennoiserie
- Strong understanding of fermentation, proofing and baking
- Excellent attention to detail and consistency
- Ability to work efficiently and independently
- Reliable, punctual and organised
- Comfortable working to high quality and presentation standards
